Latke Recipe
Make too many latkes for your family and friends—here’s a recipe! Fry them up to enjoy as you read Richard’s book.

Ingredients: Combine the grated potatoes and onions. Add in the eggs, ¼ cup of the flour, the salt, pepper and baking powder. Stir well. Fill a large frying pan with oil up to a depth of about ½ inch; heat until a small piece of potato added to the oil sizzles rapidly. Keep the first batches in a warm oven on a baking sheet until all your latkes are fried. Serve hot with applesauce or sour cream. Makes LOTS of latkes for four people. Have more people? Double or triple as needed. *In a hurry or don’t have a grater? Some supermarkets carry frozen shredded potatoes that make it a breeze to make too many latkes (or just enough!) |
